MC (Moisture Content) is the measure of how much water is contained within a piece of wood, expressed as a percentage of its dry weight.
EMC (Equilibrium Moisture Content) is the state where wood is neither absorbing nor releasing moisture because its internal moisture level has perfectly balanced with the relative humidity and temperature of its surrounding environment.
